sausage Egg Bake with microgreen powder
Recipe Ingredients
-> 2-4 sweet potatoes
-> 1 onion
-> 1 pepper
-> 8-10 eggs
-> 1 lb of pork sausage
-> 4 scoops broccoli microgreen powder
-> 1/3 cup coconut milk
-> 1 tsp garlic salt
-> 1 tsp thyme
Step 1
Pan Fry Sausage & Veggies
Cut up the onion and pepper into small pieces. In seperate pans, pan fry the one pound of pork sausage and cut up veggies.
Step 2
Peel & Mash Sweet Potatoes
Peel 2-4 sweet potatoes, depending on size, and microwave at 1-2 minutes per sweet potatoe to soften. Mash in a blow and transfer into a casserole dish. spread out the sweet potatoes for the base of the egg bake.
Step 3
Whisk Eggs & Ingredients
Preheat your oven to 375. While your oven is warming up, break 8-10 eggs into a mixing bowl and whisk. Next add the Microgreen Powder, garlic salt, coconut milk and thyme. Whisk these ingredients. Finally, combine the sausage (make sure to drain), onions and peppers to the mixing bowl.
Step 4
Layer the Egg Bake
Layer mixing bowl contents into the casserole dish. Cover the dish with aluminum foil and set in oven at 375 for 20 minutes. After the initial bake, remove the aluminum foil and place back in oven for an additional 15 minutes.
Step 5
Let Cool & Enjoy
Remove egg bake from oven and let cool for 5-10 minutes.
