Pork Roast with Broccoli Microgreens

Ingredients: (4-5 lb) pork loin roast, 4 cloves garlic, minced, 2 Tbsp olive oil, 1 tbsp fresh rosemary, chopped, 1 tbsp fresh thyme, chopped, 1 tbsp fresh sage, 1 cup chicken broth, 1 cup white wine, broccoli microgreens
Directions: Preheat your oven to 375°F. In a small bowl, mix the minced garlic, olive oil, rosemary, thyme, sage, salt, and pepper. Rub this mixture all over the pork roast. In a large oven-safe skillet or roasting pan, heat a bit of olive oil over medium-high heat. Sear the pork roast on all sides until browned, about 2-3 minutes per side. If using wine, add it and the chicken broth to the pan. Transfer the skillet or roasting pan to the preheated oven. Roast for about 1.5-2 hours, or until the internal temperature of the pork reaches 145°F (63°C). Remove the pork roast from the oven and let it rest for 10-15 minutes before slicing. Top with broccoli microgreens and add your desired sides.
