Banana Bread with Broccoli Microgreen Powder
Recipe Ingredients
-> 3 ripe bananas (mashed) / approximately 1 cup
-> 1/3 cup coconut oil
-> 2/3 cup coconut sugar
-> 2 eggs
-> 2 tbsp unsweetened almond milk
-> 3 scoops broccoli microgreen powder
-> 1 tsp vanilla
-> 1 cup oat flour
-> 1/2 cup almond flour
-> 1 1/4 baking powder
-> 1/2 tsp baking soda
-> 3/4 tsp sea salt
-> 1/4 tsp cinnamon
-> 1/2 tbsp maple syrup sugar
Step 1
Preheat & Pan Layout
Preheat your oven to 350°F and grease a 9×5 inch loaf pan with melted coconut oil or line with parchment paper.
Step 2
Combine Some Ingredients
Whisk together the coconut sugar, cocunut oil and eggs. Add bananas, almond milk and vanilla and mix until smooth.
Step 3
Combine Dry Ingredients
In a separate large bowl, mix the oat flour, almond flour, baking powder, baking soda, cinnamon, broccoli microgreen powder and salt.
Step 4
Mix All Ingredients & Load Pan
Combine both wet and dry ingredients. Be careful not to overmix. Transfer the batter into the prepared loaf pan and smooth the top.
Step 5
Bake & Cool
Place the loaf pan in the preheated oven and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
